Description from the Artist:

The history of how the Chile Relleno dish came to be suggests that the nuns of Puebla first produced the dish , however they called it 'Chile en Nogada' and had possibly served it to a General in Mexican history military victory in Puebla on Cinco de Mayo. This marked the day a smaller Mexican force defeated a larger foreign army.
